No stranger to the cresting mezcal movement, Caitlin Laman recently spent four months dedicated to research in Mexico City by consulting for Licorería Limantour (No. 13, World’s 50 Best Bars list 2016). Now as beverage director of Mezcaleria Las Flores, Laman plans to bring her own expertise on the smoky spirit.
After graduating with a B.S. in Business Administration, Laman made her way to New York, working in boutique hotels at night and training during the day, she fine-tuned her knowledge of spirits and the art of elevated bar service.
In 2009, she landed in San Francisco and quickly found her spot at the helm of the bar, Trick Dog. Since then, she has lead the bar in an incredible list of accolades: Best Bar Team (Tales of the Cocktail Spirited Awards 2014), being among the top four finalists for James Beard Outstanding Bar Program (2015), consecutive years on the Drinks International World's 50 Best Bars list (No. 33 in 2014, No. 40 in 2015), and was named Food & Wine's Best New Mixologist (2014).
“Chicago is an incredibly exciting place to be right now in terms of the cocktail scene, and I’m working with a very talented team at the Mezcaleria. The focus will definitely remain on mezcal but we will throw some cocktails based in other spirits in there as well. And of course, keep an eye out for lots of sherry in the drinks and behind the bar!" says Laman.
